Preparation of Quinoa

Cook the Quinoa
Rinse 1 cup of tri-colored quinoa under cold water. In a medium saucepan, combine the rinsed quinoa with 2 cups of water and a pinch of salt. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for about 15 minutes or until all the water is absorbed. Remove from heat and let it sit for 5 minutes before fluffing with a fork.

Combine the Salad Ingredients
In a large salad bowl, add 4 cups of organic mixed greens. Top with 2 cups of chopped organic seasonal fruit and 1 cup of chopped organic seasonal vegetables. Add the cooked quinoa, crumbled goat cheese, chopped dates, and chopped candied walnuts to the bowl.
Dress the Salad

Add Balsamic Vinaigrette
Drizzle 0.5 cup of balsamic vinaigrette over the salad mixture. Gently toss the salad to ensure all ingredients are well coated with the dressing.
