Cooking Beans

    Prepare the Beans

    In a medium pot, add 1 cup of Rancho Gordo pinto beans and 4 cups of water. Rinse the beans under cold water to remove any dirt or debris.

    Soak the Beans

    Let the beans soak in water overnight or for at least 6 hours. This will help soften the beans and reduce cooking time.

    Cook the Beans

    After soaking, drain the beans and return them to the pot. Add 4 cups of fresh water, 2 garlic cloves (peeled), and 1 medium onion (cut in half). Bring to a boil and then reduce to a simmer. Cook for about 1.5 to 2 hours or until the beans are tender.

    Season the Beans

    Once the beans are cooked, remove the garlic and onion. Stir in 1 tsp of salt and mash the beans with a potato masher or fork until you achieve your desired consistency.

    Assemble the Dish

    Spoon the refried beans onto a serving plate. Top generously with 1 cup of crumbled queso fresco and sprinkle with 1 tbs of chopped cilantro.

    Serve with lime wedges on the side for squeezing over the beans, to taste.
