Toppings

Method

Chorizo and Eggs

  1. 1

    Cook the Chorizo

In a skillet over medium heat, add the house-made chorizo. Cook, breaking it apart with a spatula, until browned and cooked through, about 5-7 minutes.

  2. 2

    Scramble the Eggs

In a bowl, whisk together the pasture-raised eggs, salt, and black pepper. Pour the egg mixture into the skillet with the cooked chorizo and gently stir until the eggs are just set, about 2-3 minutes.

Breakfast Potatoes

  1. 3

    Prepare the Potatoes

Wash and dice the potatoes into small cubes. In a pot, cover the diced potatoes with water and bring to a boil. Cook for about 10 minutes until slightly tender, then drain.

  2. 4

    Fry the Potatoes

In a skillet, heat olive oil over medium heat. Add the drained potatoes, garlic powder, paprika, and salt. Cook, stirring occasionally, until crispy and golden brown, about 10-15 minutes.

Refried Beans

  1. 5

    Sauté the Aromatics

In a saucepan, heat a little oil over medium heat. Add the chopped onion and minced garlic, cooking until softened and fragrant, about 3-4 minutes.

  2. 6

    Cook the Beans

Add the cooked Rancho Gordo pinto beans, cumin, and salt. Mash the beans with a fork or potato masher, and cook until heated through and creamy, about 5-7 minutes.

Tortillas

  1. 7

    Make the Dough

In a bowl, combine corn masa harina and salt. Gradually add water, mixing until a smooth dough forms.

  2. 8

    Cook the Tortillas

Divide the dough into small balls. Using a tortilla press or rolling pin, flatten each ball into a tortilla. Cook each tortilla on a hot skillet for about 1-2 minutes on each side until lightly toasted.

Toppings

  1. 9

    Assemble the Dish

On a plate, serve a portion of chorizo and eggs, a side of crispy breakfast potatoes, refried beans, and warm handmade corn tortillas. Top with crumbled queso fresco and chopped cilantro.
