Steak Preparation

    Season and Cook the Steak

    Season the NY steak with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Once hot, add the steak and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness is achieved. Let it rest for 5 minutes before slicing.

    In a separate pan, melt butter over medium heat. Crack the pasture-raised eggs into the pan and cook to your preferred style (sunny-side-up, over-easy, or scrambled). Remove from heat when cooked.

Nopal Preparation

    Brush the nopal cactus pads with olive oil and sprinkle with salt. Grill on medium heat for about 3-4 minutes on each side until tender and slightly charred. Remove from heat and slice into strips.

Refried Beans Preparation

    In a skillet, heat olive oil over medium heat. Add the Rancho Gordo pinto beans and cumin, and mash them together with a fork or potato masher until smooth. Cook for about 5 minutes until heated through. Stir in crumbled queso fresco just before serving.
