Roast the Anaheim peppers over an open flame or in the oven until the skin is blistered. Place them in a plastic bag for 10 minutes to steam, then peel the skins off.

Stuff each pepper with shredded cheddar cheese and set aside.

Prepare Sweet Potatoes
Preheat the oven to 400°F (200°C). Peel and cube the sweet potatoes.

Toss the sweet potato cubes with olive oil, salt, and black pepper. Spread them on a baking sheet and roast for 25-30 minutes or until tender.

Heat the carnitas in a skillet over medium heat until warmed through.

Season the chicken breast with salt and pepper. Grill over medium-high heat for about 6-7 minutes per side until fully cooked.

Season the St. Louis ribs with your favorite rub and grill or bake at 300°F (150°C) for approximately 2-3 hours until tender.
