Method

Preparation of Rice

Rinse the Rice

Place the long-grain white rice in a fine mesh strainer and rinse under cold running water until the water runs clear. This will help remove excess starch.

Soak the Rice

Transfer the rinsed rice to a bowl and add 2 cups of water. Let it soak for at least 4 hours or overnight for best results.

Blending

Blend the Mixture

After soaking, drain the rice and place it in a blender. Add the remaining 2 cups of water, Medjool dates, cinnamon sticks, vanilla extract, and salt. Blend on high speed until the mixture is smooth and creamy.

Straining

Strain the Horchata

Pour the blended mixture through a fine mesh strainer or cheesecloth into a large pitcher. Use a spoon to press down on the mixture to extract as much liquid as possible, discarding the solids.

Serving

Serve Chilled

Serve the horchata over ice cubes and sprinkle with ground cinnamon for garnish. Stir well before serving.
