Prepare Tortilla Chips

Cut each corn tortilla into 6 wedges. Heat vegetable oil in a large pot over medium heat. Once hot, fry the tortilla wedges in batches until golden brown and crispy, about 2-3 minutes. Remove and drain on paper towels, then sprinkle with salt while still warm.

Make Salsa Fresca

Dice the tomatoes and red onion finely. In a mixing bowl, combine the diced tomatoes, red onion, chopped cilantro, lime juice, and diced jalapeño. Season with salt to taste. Mix well and set aside.

Guacamole

Prepare Guacamole

In a bowl, mash the ripe avocados with a fork. Mix in lime juice, salt, and garlic powder until smooth or to your preferred consistency. Taste and adjust seasoning if needed.

Crema

Make Crema

In a small bowl, mix sour cream with lime juice until well combined. Set aside.

Assemble Nachos

Assemble and Serve

On a large serving platter, layer the tortilla chips. Top with black beans, shredded jack cheese, crumbled queso fresco, salsa fresca, guacamole, crema, pickled jalapeños, and pickled carrots. Serve immediately and enjoy!
