Method

Cooking Beans

  1. 1

    Soak the Beans

In a large bowl, combine the Rancho Gordo pinto beans with enough water to cover them by 2 inches. Allow them to soak for at least 8 hours or overnight.

  2. 2

    Rinse and Drain

After soaking, drain and rinse the beans under cold water to remove any debris.

  3. 3

    Cook the Beans

In a large pot, combine the rinsed beans, 4 cups of fresh water, and the garlic cloves. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 1.5 to 2 hours, or until the beans are tender.

  4. 4

    Season the Beans

Once the beans are cooked, add salt to taste and stir gently. Allow the beans to sit for about 10 minutes to absorb the flavors.

Preparing Toppings

  1. 5

    Chop Onion and Cilantro

While the beans are cooking, dice the onion and chop the fresh cilantro. Set aside.

Serving

  1. 6

    Assemble the Dish

Spoon the cooked beans into serving bowls. Top with the diced onion and chopped cilantro before serving.
