    Soak the Beans

    Rinse the Rancho Gordo black beans under cold water to remove any dirt or debris. Place the beans in a bowl and cover them with water. Allow them to soak for at least 4 hours or overnight for best results.

Cooking

    Cook the Beans

    Drain the soaked beans and transfer them to a large pot. Add 4 cups of fresh water. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 1 to 1.5 hours or until the beans are tender.

    Prepare the Seasoning

    While the beans cook, finely chop the onion and garlic. In a separate pan, heat a little oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Add the minced garlic and cumin powder, and cook for an additional 1-2 minutes until fragrant.

    Combine Ingredients

    Once the beans are tender, add the sautéed onion and garlic mixture to the pot with the beans. Stir in the epazote, and season with salt and black pepper to taste. Simmer for an additional 10-15 minutes to allow the flavors to meld together.

Serving

    Serve the Epazote Black Beans hot, garnished with lime wedges and chopped cilantro if desired.
