Corn Preparation

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Prepare the Corn

    Husk the corn and remove all silk. Brush each ear of corn with olive oil and sprinkle with salt.

    Grill the Corn

    Place the corn directly on the grill. Cook for about 10-15 minutes, turning every 2-3 minutes until the corn is charred and cooked through.

Ancho Lime Aioli

    Mix the Aioli

    In a bowl, combine vegan mayonnaise, lime juice, ancho chili powder, garlic powder, and salt. Mix well until smooth. Adjust seasoning to taste.

Assemble the Elote

    Add Toppings

    Once the corn is cooked, remove it from the grill. Brush each ear of corn generously with ancho lime aioli.

    Sprinkle Cheese and Chile

    Sprinkle crumbled queso fresco (or vegan cheese) over the aioli, followed by ground chile and chopped cilantro.

    Serve the elote hot, with lime wedges on the side for extra flavor.
