Battered Cauliflower

Serrano Lime Crema

Method

Battered Cauliflower Preparation

  1. 1

    Prepare the Cauliflower

Remove the leaves and stem from the cauliflower head, and cut it into bite-sized florets.

  2. 2

    Make the Batter

In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the water until the batter is smooth and free of lumps.

  3. 3

    Heat the Oil

In a large pot or deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  4. 4

    Fry the Cauliflower

Dip each cauliflower floret into the batter, allowing excess batter to drip off. Carefully place the battered florets into the hot oil, frying them in batches to avoid overcrowding. Fry until golden brown and crispy, about 3-4 minutes per batch.

  5. 5

    Drain and Season

Using a slotted spoon, remove the fried cauliflower from the oil and place them on a paper towel-lined plate to drain any excess oil. Season with additional salt if desired.

Serrano Lime Crema Preparation

  1. 6

    Blend the Ingredients

In a blender or food processor, combine the sour cream, serrano pepper (seeds removed for less heat if desired), lime juice, garlic, and salt. Blend until smooth and creamy.

  2. 7

    Taste and Adjust

Taste the crema and adjust the salt or lime juice as needed to achieve your desired flavor.
