Pork Carnitas

    Prepare the Pork

    In a slow cooker, combine the pork shoulder, orange juice, lime juice, minced garlic, cumin, oregano, salt, and pepper. Mix well.

    Cook the Pork

    Cover and cook on low for 8-10 hours or until the pork is tender and easily shredded with a fork.

    Shred the Pork

    Once cooked, shred the pork using two forks and let it soak in the juices.

Arroz Rojo

    Sauté the Aromatics

    In a large saucepan, heat the vegetable oil over medium heat. Add the diced onion and minced garlic, sauté until the onion is translucent.

    Cook the Rice

    Add the rice to the pan and stir to coat. Pour in the tomato sauce and chicken broth, and add salt. Bring to a boil, then reduce to low heat, cover, and simmer for 20 minutes or until the rice is cooked.

Frijoles de la Olla

    Prepare the Beans

    In a pot, combine the pinto beans, water, quartered onion, whole garlic cloves, and salt. Bring to a boil.

    Cook the Beans

    Reduce heat to low, cover, and simmer for about 1.5 to 2 hours, or until the beans are tender. Remove onion and garlic before serving.

Assemble the Bowl

    Layer the Ingredients

    In a bowl, start with a layer of arroz rojo, followed by frijoles de la olla, then top with shredded carnitas.

    Add Toppings

    Finish by adding shredded iceberg lettuce, pickled habanero, pickled red onion, guacamole, salsa fresca, and salsa cruda on top. Serve immediately.
