    Prepare the Dough

    In a medium saucepan, combine water, sugar, salt, and coconut oil. Heat over medium heat until the mixture comes to a boil.

    Mix the Dough

    Remove the saucepan from heat and quickly stir in the flour until fully combined. The dough should be smooth and slightly sticky.

    Heat the Oil

    In a deep frying pan or pot, heat the oil over medium heat until it reaches 350°F (175°C).

    Form the Churros

    Transfer the dough to a piping bag fitted with a star tip. Pipe 6-inch long strips of dough into the hot oil, cutting them with scissors.

    Fry the Churros

    Fry the churros in batches until golden brown, about 2-3 minutes on each side. Remove them with a slotted spoon and drain on paper towels.

    Coat in Sugar and Cinnamon

    In a shallow dish, mix sugar and ground cinnamon. Roll the hot churros in the mixture until well coated.

Chocolate Sauce

    In a small saucepan over low heat, combine dark chocolate and coconut milk. Stir until the chocolate is completely melted and the mixture is smooth.

    Stir in vanilla extract and sugar. Mix well until fully combined and smooth.
