Pork Chile Verde

    Prepare the Tomatillo Salsa

    In a blender, combine tomatillos, onion, garlic, jalapeño, cilantro, cumin, salt, and black pepper. Blend until smooth.

    Brown the Pork

    In a large pot, heat olive oil over medium-high heat. Add the pork shoulder and brown on all sides for about 5-7 minutes.

    Add Salsa and Broth

    Pour the prepared tomatillo salsa over the browned pork and add chicken broth. Bring to a simmer.

    Braise the Pork

    Cover the pot and reduce heat to low. Let the pork braise for 2-3 hours until tender.

Arroz Rojo

    Sauté the Rice

    In a saucepan, heat olive oil over medium heat. Add rice and sauté for 3-4 minutes until lightly toasted.

    Add Liquids and Cook

    Add garlic, tomato sauce, chicken broth, and salt. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes until rice is cooked.

Refried Beans

    Sauté Onion and Garlic

    In a skillet, heat olive oil over medium heat. Add diced onion and minced garlic. Sauté until onion is translucent.

    Cook Beans

    Add pinto beans and salt to the skillet. Mash beans with a fork or potato masher and cook until heated through.

Corn Tortillas

    Make the Dough

    In a bowl, mix corn masa harina and salt. Gradually add warm water until a soft dough forms.

    Cook the Tortillas

    Divide the dough into small balls. Flatten each ball into a tortilla shape and cook on a hot skillet for 1-2 minutes on each side.
