    Soak the Beans

    Rinse the Rancho Gordo pinto beans under cold water to remove any debris. Place them in a large bowl, cover with water, and allow to soak overnight.

    Cook the Beans

    After soaking, drain the beans and transfer them to a large pot. Add fresh water to cover the beans by about 2 inches. Bring to a boil, then reduce heat to low and simmer for about 1.5 hours, or until beans are tender. Drain and set aside.

    Prepare the Meats

    In a large skillet over medium heat, cook the applewood bacon until crispy. Remove from the skillet and drain on paper towels. In the same skillet, add the house-made chorizo and cook until browned, about 5-7 minutes. Add the diced ham and stir to combine.

    Combine Ingredients

    Add the cooked pinto beans to the skillet with the chorizo and ham. Dice the medium tomato and add it to the mixture. Season with salt, black pepper, cumin, and garlic powder. Stir well to combine all ingredients.

    Simmer

    Reduce the heat to low and let the mixture simmer for about 15-20 minutes, allowing the flavors to meld together. Stir occasionally.

Garnish and Serve

    Finely chop the small onion and the cilantro. Once the beans are ready, serve them in bowls and top with the chopped onion and cilantro.
