Prepare the Orange Peels
Using a vegetable peeler, carefully remove the peel from the Valencia oranges, ensuring to avoid the white pith as much as possible. You will need two pieces.

Prepare the Spice Infusion
In a small saucepan, combine the cinnamon stick, star anise, and cloves with 100 ml of water. Bring to a simmer over medium heat and let it steep for 10 minutes. Remove from heat and let it cool.

Make Simple Syrup
In a small saucepan, combine equal parts of sugar and water (e.g., 30 ml sugar and 30 ml water). Heat gently, stirring until the sugar is dissolved. Let it cool.
Assembly of the Drink

Mix the Ingredients
In a large glass filled with ice, pour in 150 ml of Chandon sparkling wine followed by 30 ml of simple syrup, and 100 ml of soda water.

Add the Infusion
Strain the cooled spice infusion into the glass, ensuring to remove the spices.

Garnish
Gently stir the mixture and add the prepared Valencia orange peels on top. Garnish with fresh mint leaves and a slice of orange.
