Method
Preparing the Base
Mix Corn Masa Harina
In a large bowl, combine the corn masa harina with 1 cup of water to create a smooth paste. Stir well until there are no lumps.
Heat Remaining Water
In a large saucepan, bring the remaining 3 cups of water to a boil over medium heat. Once boiling, reduce the heat to low.
Cooking the Champurrado
Combine Mixtures
Slowly pour the masa harina paste into the saucepan with the boiling water, whisking constantly to prevent lumps from forming.
Add Flavorings
Add the cinnamon stick and piloncillo (or brown sugar) to the mixture. Continue to whisk until the piloncillo has completely dissolved.
Simmer
Allow the mixture to simmer for about 10-15 minutes, stirring frequently until it thickens to your desired consistency.
