Method

Prepare the Shrimp

1

Clean and Chop Shrimp

Start by cleaning the wild caught shrimp. Remove the shells and devein them. Chop the shrimp into small bite-sized pieces.

2

Marinate Shrimp

In a glass bowl, combine the chopped shrimp with lime juice. Ensure the shrimp is fully coated. Cover and refrigerate for about 30 minutes to allow the shrimp to 'cook' in the acidity.

Make Salsa Cruda

3

Combine Ingredients

In a separate bowl, mix together diced tomatoes, minced jalapeño, salt, and the remaining lime juice. Stir well to combine.

Prepare Ceviche

4

Mix Ceviche Ingredients

Once the shrimp has marinated, add it to the salsa cruda mixture. Then, gently fold in the diced mango, red onion, avocado, cucumber, and chopped cilantro. Mix gently to avoid mashing the avocado.

Make Tortilla Chips

5

Cut and Fry Tortillas

Cut corn tortillas into triangles. Heat oil in a frying pan over medium heat. Once hot, add the tortilla triangles in batches and fry until golden and crispy, about 2-3 minutes. Drain on paper towels and sprinkle with salt.

Serve

6

Plate the Dish

Serve the ceviche chilled in a bowl alongside the house-made tortilla chips. Enjoy!
