Method

Pork Carnitas

    Prepare the Pork

    Cut the pork shoulder into large chunks and season with salt, cumin, and black pepper.

    Cook the Pork

    In a slow cooker, add the seasoned pork, minced garlic, orange juice, lime juice, and bay leaves. Cover and cook on low for 8 hours or until the meat is tender and easy to shred.

    Shred the Pork

    Once cooked, remove the pork from the slow cooker, shred it with two forks, and return it to the cooker to soak in its juices.

Charro Beans

    Prepare the Beans

    Drain the soaked pinto beans and rinse under cold water.

    Cook the Beans

    In a pot, combine the rinsed beans, diced onion, minced garlic, diced tomato, diced jalapeño, and water. Bring to a boil, then reduce heat and simmer for about 1.5 to 2 hours, or until beans are tender. Season with salt and stir in chopped cilantro before serving.

Arroz Rojo

    Sauté the Base

    In a saucepan, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until translucent.

    Cook the Rice

    Add the long-grain rice to the saucepan, stirring for a few minutes until slightly toasted. Add the tomato sauce and vegetable broth, bring to a boil, then reduce heat, cover, and simmer for about 20 minutes or until the rice is cooked and liquid is absorbed. Season with salt to taste.

Pickled Habanero Red Onion

    Prepare the Pickling Mixture

    In a bowl, combine white vinegar, sugar, and salt. Mix until the sugar dissolves.

    Pickle the Onions

    Add the sliced red onion and habanero pepper to the mixture. Let it sit for at least 30 minutes before using.

Salsa Cruda

    Combine Ingredients

    In a bowl, mix together diced tomatoes, diced onion, chopped cilantro, lime juice, and salt to taste. Set aside for flavors to meld.

Guacamole

    Mash the Avocados

    In a bowl, mash the ripe avocados with lime juice and salt until creamy.

    Add Cilantro

    Stir in chopped cilantro and mix well.

Burrito Assembly

    Assemble the Burritos

    On a large flour tortilla, layer shredded pork, charro beans, arroz rojo, pickled onions, salsa cruda, and guacamole. Roll the tortilla tightly to enclose the filling. Repeat with remaining tortillas and filling.
