For the Steak

    Marinate the Steak

    In a bowl, combine olive oil, lime juice, minced garlic, cumin, chili powder, salt, and black pepper. Add the flank steak, ensuring it is well coated. Marinate for at least 1 hour, preferably overnight.

    Grill the Steak

    Preheat a grill to medium-high heat. Remove the steak from the marinade and grill for 6-8 minutes per side, or until desired doneness is achieved. Let it rest for 5 minutes before slicing against the grain.

For the Citrus Avocado Salsa

    Prepare the Salsa

    In a mixing bowl, combine diced avocados, halved cherry tomatoes, chopped red onion, and cilantro. Drizzle with lime juice, season with salt to taste, and gently toss to combine.

    Cook the Rice

    In a saucepan, heat olive oil over medium heat. Sauté chopped onion and minced garlic until softened. Add the rice and toast for about 2 minutes. Stir in tomato sauce and vegetable broth, season with salt, and bring to a boil. Reduce heat, cover, and simmer for 18-20 minutes or until rice is cooked and liquid is absorbed.

    In a skillet, heat olive oil over medium heat. Sauté chopped onion and minced garlic until softened. Add the drained pinto beans and cumin, stirring to combine. Cook for 5-7 minutes until heated through, seasoning with salt to taste.

For the Burrito Assembly

    Assemble the Burritos

    Lay a flour tortilla flat and layer a portion of the grilled flank steak, arroz rojo, pinto beans, and citrus avocado salsa. Sprinkle with fresh cilantro. Fold the sides of the tortilla inwards and roll tightly from the bottom to form a burrito. Repeat with remaining tortillas.
