Method
Preparing Sweet Potatoes

Wash and Cut Sweet Potatoes
Rinse the sweet potatoes under cold water to remove any dirt. Cut them in half lengthwise.

Seasoning
Drizzle olive oil over the cut sides of the sweet potatoes. Sprinkle salt and black pepper evenly on top.

Char the Sweet Potatoes
Preheat a grill or grill pan over medium-high heat. Place the sweet potatoes cut side down on the grill. Cook for about 5-7 minutes until charred and soft. Flip and cook for an additional 5-7 minutes.
Making Chipotle Aioli

Combine Ingredients
In a mixing bowl, combine mayonnaise, chopped chipotle peppers in adobo, lime juice, minced garlic, and salt.

Mix Well
Whisk the ingredients together until smooth and well combined. Adjust the seasoning if necessary.
Serving

Plate the Dish
Once the sweet potatoes are charred, remove them from the grill and place them on a serving platter.

Add Aioli
Drizzle or serve the chipotle aioli on top of the sweet potatoes or on the side for dipping.
