Method
Bread Pudding
- 1
Prepare the Bread
Preheat your oven to 350°F (175°C). Tear the stale bread into bite-sized pieces and place them in a large mixing bowl.
- 2
Mix Wet Ingredients
In a separate bowl, whisk together the milk, heavy cream, granulated sugar, brown sugar, eggs, vanilla extract, cinnamon, and salt until well combined.
- 3
Combine Ingredients
Pour the wet mixture over the bread pieces in the mixing bowl. Gently fold the bread to fully absorb the liquid. Let it sit for about 15-20 minutes.
- 4
Bake
Transfer the mixture into a greased baking dish and spread it out evenly. Bake in the preheated oven for 45-50 minutes or until the top is golden brown and a toothpick inserted comes out clean.
Candied Walnuts
- 5
Prepare the Walnuts
In a small saucepan over medium heat, combine the walnuts, sugar, and water. Stir until the sugar dissolves.
- 6
Candy the Walnuts
Continue to cook, stirring frequently, until the mixture thickens and the walnuts are coated (about 5-7 minutes). Remove from heat and let them cool on parchment paper.
Caramel Sauce
- 7
Make the Caramel
In a medium saucepan over medium heat, add the granulated sugar. Once it begins to melt, whisk continuously until it turns a deep amber color.
- 8
Add Butter and Cream
Remove from heat and carefully add the butter, whisking until melted. Slowly add the cream while whisking continuously until the sauce is smooth.
Serving
- 9
Serve
Serve warm bread pudding topped with a scoop of organic ice cream, a drizzle of caramel sauce, and a sprinkle of candied walnuts.
