Prepare the Shrimp
Peel and devein the jumbo wild shrimp, removing the shells and tails. Pat them dry with a paper towel.

Prepare the Jalapeño
Finely chop the jalapeño, removing seeds if you prefer less heat.

Prepare the Cabbage
Shred the cabbage into thin strips and set aside.

Prepare the Queso Oaxaca
Cut the queso Oaxaca into small strips or cubes, about 15-20 grams each.
Assembly

Wrap the Shrimp
Take one shrimp and place a strip of queso Oaxaca inside. Add a small amount of chopped jalapeño and then wrap it tightly with a slice of applewood bacon. Secure with a toothpick if necessary. Repeat for all shrimp.
Cooking

Cook the Bacon-Wrapped Shrimp
Preheat your grill or oven to 400°F (200°C). Place the bacon-wrapped shrimp on the grill or a baking sheet lined with parchment paper. Cook for about 10-12 minutes, turning occasionally, until the bacon is crispy and the shrimp are cooked through.

In a small bowl, mix the honey-chipotle glaze. Brush over the shrimp during the last 2 minutes of cooking for added flavor.
