    Prepare the Vegetables

    Dice the poblano pepper, carrot, and chop the cilantro finely. Set aside.

    Rinse the Rice

    In a fine mesh strainer, rinse the organic rice under cold water until the water runs clear to remove excess starch.

Cooking

    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the diced poblano pepper and carrot. Sauté for about 5 minutes until they begin to soften.

    Add Rice and Broth

    Stir in the rinsed organic rice, followed by the vegetable broth and salt. Bring to a boil.

    Cook the Rice

    Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 15 minutes.

    Add Peas and Corn

    After 15 minutes, add the peas and corn to the pot. Stir gently, cover again, and cook for an additional 5 minutes.

    Finish with Cilantro

    Once the rice is cooked and all the liquid is absorbed, remove from heat and fluff with a fork. Stir in the chopped cilantro before serving.
