    Prep the Vegetables

    Finely chop the onion and garlic. Dice the tomato, carrot, and set aside the peas and corn.

Cooking

    Sauté the Aromatics

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent, about 3-4 minutes.

    Add Tomato and Rice

    Stir in the diced tomato and cook for another 2-3 minutes. Add the organic rice to the pot and stir well to coat the grains with oil and mix with the vegetables.

    Add Chicken Stock

    Pour in the chicken stock, and bring the mixture to a boil. Once boiling, reduce the heat to low and cover the pot.

    Simmer

    Let it simmer for about 15 minutes, or until the rice is cooked and has absorbed most of the stock.

    Add Vegetables

    After 15 minutes, add the peas, corn, and diced carrot to the pot. Stir gently to combine.

    Final Seasoning

    Season with salt and black pepper to taste. Cover the pot again and let it cook for an additional 5 minutes.

    Fluff and Serve

    Remove the pot from heat. Let it sit for a few minutes before fluffing the rice with a fork. Serve warm as a side dish or main course.
