Method
Prep
Chill and measure
Fill a Collins glass or tiki mug with crushed ice to chill while you prepare the drink. Measure and set out all rums, juices, falernum, grenadine, simple syrup and bitters.
If using whole spices for stronger cinnamon aroma, toast a small pinch briefly in a dry skillet for 10–20 seconds and let cool; otherwise use ground cinnamon as listed.
Mixing
Combine ingredients
In a cocktail shaker add the aged dark rum (1 oz), light rum (1 oz), Avo-Falernum (0.5 oz), fresh lime juice (0.75 oz), fresh grapefruit juice (0.5 oz), fresh pineapple juice (1 oz), grenadine (0.5 oz) and simple syrup (0.25 oz).
Add bitters and spice
Add 2 dashes of Angostura bitters to the shaker and the ground cinnamon (1 tsp). The cinnamon is intended to add a warm spice note; if you prefer less, start with 1/4–1/2 tsp and adjust in future batches.
Dry shake (optional)
For a slightly frothy texture and to better integrate the cinnamon, perform a dry shake: seal the shaker and shake vigorously without ice for 8–10 seconds.
Wet shake
Add a generous handful of ice to the shaker and shake hard for 12–15 seconds until the shaker is very cold to the touch and the mixture is well chilled and diluted.
Finishing & serving
Strain & float overproof rum
Double-strain the shaken cocktail over the crushed ice. Carefully float the overproof rum (0.5 oz) on top by pouring it slowly over the back of a bar spoon so it sits atop the drink.
Garnish & aroma
Sprinkle a light pinch of ground cinnamon over the top (you may dust the rim lightly if desired). Garnish with a mint sprig and a dehydrated grapefruit wheel or lime wedge. For extra aroma, clap the mint between your palms and tuck it into the garnish so the fragrance sits above the drink.
Serve
Serve immediately with a straw. Advise the drinker to sip carefully — the float of overproof rum makes the cocktail potent. Optionally, light the floated rum briefly for a flaming presentation (only if you are experienced and take appropriate safety precautions).
