Method
Prepare & Mix
Chill glass
Fill a tall hurricane or Collins glass with crushed ice to chill while you prepare the cocktail.
Combine ingredients
In a cocktail shaker, add 1.5 oz white rum, 0.5 oz orange liqueur, 0.5 oz peach schnapps, 2 oz pineapple juice, 1 oz orange juice, 0.75 oz passion fruit puree (or juice), 0.5 oz fresh lime juice, and 0.25 oz simple syrup. If using bitters, add 1 dash.
Add ice and shake
Fill the shaker about two-thirds with ice, cap, and shake vigorously for 10–12 seconds until well chilled and slightly diluted.
Assemble & Finish
Strain over ice
Double-strain the shaken mixture into the prepared glass over the crushed ice to remove any pulp or small shards of ice.
Create the volcano effect
Slowly pour 0.5 oz dark rum over the back of a spoon held just above the drink surface so the dark rum floats on top, creating a 'lava' layer. Immediately drizzle 0.25 oz grenadine down the center so it sinks through the drink and creates a rising-red 'lava' column.
Garnish
Skewer a maraschino cherry and a small pineapple wedge on a cocktail pick and rest it across the rim. Slap the mint sprig once to release aroma and tuck it beside the garnish.
