Prepare glass

Chill a large coupe or Nick & Nora glass by placing it in the freezer or filling it with ice water for a few minutes. If using ice water, empty it just before pouring the drink.

Combine ingredients

Add 2 oz The Botanist Gin, 1 oz strained fresh passionfruit juice, 0.75 oz fresh lemon juice, 0.75 oz avo-orgeat, 0.5 oz falernum, and 0.25 oz simple syrup (optional, if you prefer a touch more sweetness) into a cocktail shaker.

Add ice and shake

Fill the shaker with ice (large cubes) and shake vigorously for 12–15 seconds until well chilled and properly diluted.

Double strain over crushed ice

Discard the ice from the chilled glass. Fill the glass with about 1 cup of crushed ice. Double-strain the shaken mixture (use both a Hawthorne/strainer and a fine mesh strainer) over the crushed ice to ensure a velvety texture free of fruit solids.

Finish & garnish

Add 2 dashes of Angostura bitters on top of the crushed ice. Optionally float half a passionfruit (cut side up) or a small spoonful of passionfruit pulp on the top. Garnish with an edible flower or a thin lemon wheel if desired.

Serve

Serve immediately with a straw or small spoon for scooping. Sip and enjoy — the aromatics of The Botanist and bright passionfruit balanced by the nutty avo-orgeat and spiced falernum should create a layered, out-of-this-world experience.
