Prepare glass

Add ice to a highball or Collins glass to chill while you prepare the cocktail. Set aside.

Muddle mint

In a cocktail shaker, place the fresh mint leaves and simple syrup. Gently muddle 6–8 times—just enough to bruise the leaves and release oils. Avoid over-muddling to prevent bitterness.

Add spirits and citrus

Add Olmeca Reposado Tequila (2 oz), lychee liqueur (0.75 oz), and fresh lime juice (0.75 oz) to the shaker with the muddled mint.

Add ice and shake

Fill the shaker halfway with ice (about 1 cup), secure the lid, and shake vigorously for 10–12 seconds until the shaker is cold and well-chilled.

Strain over fresh ice

Discard the ice from the chilled serving glass and fill it with fresh ice. Double-strain the shaken mixture into the glass using a Hawthorne strainer and a fine mesh strainer to remove mint fragments and any pulp.

Top with ginger beer

Gently top the cocktail with 3 oz chilled Schweppes ginger beer. Pour slowly over the back of a bar spoon if you want a layered effervescence, and stir once gently (1–2 turns) to combine without losing too much carbonation.

Garnish and finish

Garnish with a fresh mint sprig (slap it between your palms to release aroma) and a lychee fruit or lime wheel on the rim. Serve immediately.

Notes on balance

Taste and adjust: if you prefer sweeter, add 1/4 oz more simple syrup; for more lime brightness, add 1/4 oz more lime juice. If you don't have lychee liqueur, use 1/2 oz lychee syrup plus 1/4 oz neutral spirit or vodka.
