Method
Doris Plum Syrup
Combine the chopped Doris plums, sugar, and water in a small saucepan.
Bring mixture to a gentle simmer over medium heat, stirring until sugar dissolves. Once simmering, reduce heat to low and cook, gently mashing the plums with a spoon, for 8–10 minutes until fruit is soft and liquid is syrupy.
Optional: add a fresh mint sprig during the last 2 minutes of simmering to impart a subtle mint note, then remove the sprig.
Remove saucepan from heat. Stir in 1 tablespoon fresh lime juice to brighten the syrup and balance sweetness.
Let the mixture cool slightly (10–15 minutes), then strain through a fine-mesh sieve into a container, pressing on solids to extract as much syrup as possible. Discard solids or reserve for another use.
Chill the syrup in the refrigerator. Store in a sealed jar for up to 2 weeks.
Cocktail Assembly (makes 1 serving)
Prepare glass and mint
Place 8 fresh mint leaves in a sturdy mixing glass or directly in a Collins/highball glass. Add 0.75 oz Doris plum syrup and 0.5 oz fresh lime juice.
Muddle
Gently muddle the mint with the syrup and lime — press enough to bruise the leaves and release aroma, but avoid shredding them to prevent bitterness.
Mix
Stir briefly (6–8 gentle stirs) to combine the rum with the plum-mint base and chill the drink. If you prefer sweeter, add 0.25 oz simple syrup and stir once more.
Serve immediately with a straw. Before sipping, clap the mint sprig between your hands and rest it on the garnish to enhance the aroma.
