    Prepare the Tostones

    Peel the green plantains and cut them into 1-inch thick slices. Heat the vegetable oil in a frying pan over medium heat.

    Fry the plantain slices for about 3-4 minutes on each side or until they are lightly golden. Remove and drain on paper towels.

    Using the bottom of a glass or a tostonera, flatten each fried slice to about 1/2 inch thick. Return them to the hot oil and fry again for another 2-3 minutes until crispy. Drain on paper towels and sprinkle with salt.

    Make the Avocado Salsa

    In a bowl, mash the ripe avocado. Add the chopped cherry tomatoes, finely diced red onion, chopped cilantro, lime juice, and salt. Mix well.

    Serve the tostones warm with the avocado salsa on the side.
