Ice Cream Base

Method

Preparation

  1. 1

    Prepare the Ice Cream Base

In a medium saucepan, combine heavy cream, whole milk, granulated sugar, and a pinch of salt. Heat over medium heat, stirring frequently until the sugar has dissolved and the mixture is hot but not boiling.

  2. 2

    Whisk the Egg Yolks

In a separate bowl, whisk together the egg yolks. Slowly pour a small amount of the hot cream mixture into the egg yolks, whisking constantly to temper the yolks.

  3. 3

    Combine and Cook

Pour the egg yolk mixture back into the saucepan with the remaining cream mixture. Cook over medium-low heat, stirring constantly until the mixture thickens and coats the back of a spoon (about 5-7 minutes).

  4. 4

    Add Vanilla

Remove the saucepan from heat and stir in the vanilla extract. Let the mixture cool to room temperature.

  5. 5

    Chill and Churn

Once cooled, refrigerate the mixture for at least 4 hours or overnight. Then, churn the mixture in an ice cream maker according to the manufacturer's instructions.

  6. 6

    Freeze and Serve

Transfer the churned ice cream to an airtight container and freeze for at least 4 hours before serving. Enjoy your homemade vanilla ice cream!
