Make the Filling

In a skillet, cook the ground turkey, beef, and pork over medium heat until browned. Drain excess fat. Add chopped spinach and cook until wilted. Remove from heat and let cool. Stir in ricotta, Parmesan, salt, and pepper until well combined.

Prepare the Pasta Dough

In a mixing bowl, combine 200 grams of all-purpose flour and 2 large eggs. Knead the mixture until a smooth dough forms. Wrap in plastic wrap and let it rest for 30 minutes.

Roll Out the Dough

On a floured surface, roll out the dough into thin sheets, about 1/16 inch thick.

Assemble the Ravioli

Cut the dough into squares (about 3 inches each). Place a small spoonful of the filling in the center of each square. Moisten the edges with water, fold over, and press to seal.

Cook the Ravioli

Bring a large pot of salted water to a boil. Gently drop the ravioli into the boiling water and cook for 4-5 minutes or until they float to the surface.

Serve

Remove the ravioli with a slotted spoon and serve with your choice of sauce, garnishing with extra Parmesan if desired.
