Method

Directions

  1. 1

    Sauté the Vegetables

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute.

  2. 2

    Add Remaining Vegetables

Add the diced carrot, celery, zucchini, and green beans to the pot. Cook for about 5-7 minutes until the vegetables begin to soften.

  3. 3

    Incorporate Tomatoes and Broth

Stir in the canned diced tomatoes (with their juice) and the vegetable broth. Bring the mixture to a boil.

  4. 4

    Simmer the Soup

Once boiling, reduce the heat to low and add the kidney beans and pasta. Stir in the Italian seasoning, salt, and black pepper. Let the soup simmer for 15-20 minutes, or until the pasta is cooked al dente.

  5. 5

    Serve

Taste and adjust seasoning if necessary. Serve hot, garnished with grated Parmesan cheese if desired.
