Cooking Instructions

  1. 1

    Prepare the Chicken

Preheat the oven to 375°F (190°C). Heat olive oil in a large oven-safe skillet over medium-high heat. Season the chicken with salt and pepper, then brown the chicken breasts and thighs on both sides, about 5 minutes per side. Remove from skillet and set aside.

  2. 2

    Sauté the Vegetables

In the same skillet, add chopped onion, carrots, bell peppers, and celery. Sauté for about 5-7 minutes until the vegetables are softened. Add minced garlic and cook for an additional minute.

  3. 3

    Combine Ingredients

Pour in the canned diced tomatoes and chicken broth. Stir in the oregano, basil, and additional salt and pepper to taste. Bring the mixture to a simmer.

  4. 4

    Bake the Chicken

Return the browned chicken to the skillet, nestling it into the tomato sauce. Transfer the skillet to the preheated oven and bake for 30-35 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

  5. 5

    Cook the Pasta

While the chicken is baking, cook the rigatoni pasta according to package instructions. Drain and set aside.

  6. 6

    Serve

Once the chicken is done, remove it from the oven and let it rest for a few minutes. Serve the chicken and vegetable sauce over a bed of rigatoni pasta and sprinkle with grated Parmesan cheese.
