    Make the Pasta Dough

    In a large bowl, combine flour and salt. Create a well in the center and add the eggs. Gradually mix the flour into the eggs until a dough forms. Knead on a floured surface for about 10 minutes until smooth. Wrap in plastic and let it rest for 30 minutes.

    Prepare the Filling

    In a bowl, mix ricotta cheese, grated Parmesan cheese, salt, and black pepper until smooth. Set aside.

    Cook the Meat Sauce

    In a pan over medium heat, cook ground beef until browned. Drain excess fat. Add your choice of tomatoes, garlic, and herbs, and simmer for 20 minutes. Season with salt and pepper to taste.

    Roll the Pasta

    After resting, divide the dough into four pieces. Roll each piece into thin sheets using a pasta machine or rolling pin.

    Fill the Pasta

    Cut the pasta sheets into squares. Place a small spoonful of the ricotta filling in the center of each square. Fold the pasta over to create triangles, pressing to seal.

    Prepare Besciamella Sauce

    In a saucepan, melt 4 tablespoons of butter. Stir in 1/4 cup of flour and cook for 1 minute. Gradually whisk in 3 cups of milk, cooking until thickened. Add salt and nutmeg to taste.

    Assemble the Casserole

    In a baking dish, spread a layer of meat sauce, followed by a layer of filled pasta. Pour Besciamella sauce over the top. Repeat layers until all ingredients are used, finishing with Besciamella on top.

    Bake

    Preheat the oven to 375°F (190°C). Bake the casserole for 30-35 minutes until bubbly and golden on top.
