    Prepare the Ingredients

    Slice the mushrooms, red bell pepper, and green bell pepper. Mince the garlic and slice the black olives.

    Sear the Veal

    In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the veal cutlets with salt and black pepper. Once the oil is hot, add the veal cutlets and sear for about 3-4 minutes on each side until golden brown. Remove from the skillet and set aside.

    Cook the Vegetables

    In the same skillet, add the minced garlic, sliced mushrooms, and bell peppers. Sauté for about 5 minutes until the vegetables are tender.

    Add Marinara and Olives

    Pour in the marinara sauce and add the sliced black olives. Stir to combine and let the sauce simmer for about 5 minutes. Season with dried oregano and dried basil.

    Combine and Finish Cooking

    Return the seared veal cutlets to the skillet, nestling them into the sauce. Cover and simmer for an additional 10 minutes, allowing the flavors to meld and the veal to cook through.
