Preparation of Steak

Prepare the Tripe Steak

Rinse the tripe steak under cold water and pat dry with paper towels. Trim any excess fat and cut into serving-sized portions.

Season the Steak

Season the tripe steak pieces with salt and black pepper on both sides.

Cooking the Marinara Sauce

Sauté Garlic

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

Add Tomatoes and Herbs

Stir in the crushed tomatoes, dried oregano, dried basil, salt, and black pepper. If making a spicy sauce, add red pepper flakes; for a sweet sauce, add sugar.

Simmer the Sauce

Bring the sauce to a simmer. Reduce heat to low and let it cook for about 20 minutes, stirring occasionally.

Cook the Steak

In a separate skillet, heat a little olive oil over medium-high heat. Add the seasoned tripe steak pieces and cook for about 4-5 minutes on each side, or until browned and cooked through.

Combine with Sauce

Once the steak is cooked, pour the marinara sauce over the steak in the skillet. Let it simmer together for an additional 5 minutes.

Transfer the tripe steak with marinara sauce onto serving plates. Garnish with chopped fresh basil before serving.
