Preparation

    Prepare the Veal

    Pat the veal cutlets dry with paper towels. Season both sides with salt and black pepper.

    Dredge in Flour

    Place the all-purpose flour in a shallow dish. Dredge each veal cutlet in the flour, shaking off any excess.

Cooking

    Heat the Oil and Butter

    In a large skillet, heat the olive oil and 2 tablespoons of butter over medium-high heat until the butter is melted and bubbling.

    Cook the Veal

    Add the veal cutlets to the skillet in a single layer. Cook for about 3-4 minutes on each side until golden brown and cooked through. Remove the veal from the skillet and set aside.

    Make the Sauce

    In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Pour in the white wine and lemon juice, scraping up any browned bits from the bottom of the skillet. Bring the mixture to a boil and let it reduce by half, about 3-4 minutes.

    Add Capers and Finish Sauce

    Stir in the capers and the remaining 2 tablespoons of butter, whisking until the sauce is smooth. Adjust seasoning with salt and pepper as needed.

    Combine and Serve

    Return the veal cutlets to the skillet, spooning the sauce over them to coat. Cook for an additional minute to heat through. Garnish with fresh parsley before serving.
