Method

Preparation

  1. 1

    Prepare the Veal

Season the veal cutlets with salt and black pepper on both sides.

  2. 2

    Dredge in Flour

Coat the seasoned veal cutlets in all-purpose flour, shaking off any excess flour.

Cooking

  1. 3

    Sear the Veal

In a large skillet, heat olive oil and 1 tablespoon of butter over medium-high heat. Add the veal cutlets and cook for about 3-4 minutes on each side, or until golden brown. Remove them from the skillet and set aside.

  2. 4

    Cook the Mushrooms

In the same skillet, add the remaining tablespoon of butter. Add the sliced mushrooms and garlic. Sauté for about 5 minutes or until the mushrooms are browned and tender.

  3. 5

    Make the Sauce

Pour in the Marsala wine and beef broth, scraping the bottom of the skillet to deglaze. Bring to a simmer and cook for about 5 minutes until the sauce reduces slightly.

  4. 6

    Combine and Finish

Return the veal cutlets to the skillet, spooning the sauce over them. Cook for an additional 2-3 minutes until the veal is heated through. Garnish with fresh parsley before serving.
