    Prepare the Vegetables

    Wash and slice the mushrooms, bell peppers, and onion into thin strips. Dice the potatoes into small cubes.

    Season the Steak

    Rub both sides of the ribeye steak with salt, black pepper, garlic powder, and paprika. Allow it to sit at room temperature for about 20-30 minutes.

Cooking

    Cook the Potatoes

    In a large pot, add the diced potatoes and cover them with water. Bring to a boil and cook for 10-15 minutes until fork-tender. Drain and set aside.

    Sear the Steak

    In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the ribeye steak and sear for about 4-5 minutes on each side for medium-rare. Remove from the skillet and let it rest.

    Sauté the Vegetables

    In the same skillet, add another tablespoon of olive oil. Add the sliced onions, bell peppers, and mushrooms. Sauté for about 5-7 minutes until they are soft and slightly caramelized.

    Combine and Serve

    Add the drained potatoes to the skillet with the sautéed vegetables. Toss to combine and warm through for 2-3 minutes. Slice the steak and serve on a plate with the vegetable mixture.
