Preparing the Pasta

Cooking the Spaghetti
In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually around 8-10 minutes. Stir occasionally to prevent sticking.

Draining the Pasta
Once the spaghetti is cooked, reserve about 1 cup of the pasta cooking water. Drain the spaghetti in a colander and set aside.

Roasting the Garlic
Preheat your oven to 400°F (200°C). Slice the tops off the garlic cloves to expose the ends. Place them on a piece of aluminum foil, drizzle with a bit of olive oil, and wrap the foil tightly. Roast in the oven for about 30-35 minutes until the garlic is soft and caramelized.

Preparing the Olive Oil Mixture
In a large skillet, heat the extra virgin olive oil over medium heat. Once hot, add the roasted garlic (squeezed out of their skins) and red pepper flakes. Cook for 2-3 minutes, stirring occasionally until the garlic is just golden but not burnt.
