Preparing the Pasta

    Cooking the Spaghetti

    In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually around 8-10 minutes. Stir occasionally to prevent sticking.

    Draining the Pasta

    Once the spaghetti is cooked, reserve about 1 cup of the pasta cooking water. Drain the spaghetti in a colander and set aside.

Making the Sauce

    Roasting the Garlic

    Preheat your oven to 400°F (200°C). Slice the tops off the garlic cloves to expose the ends. Place them on a piece of aluminum foil, drizzle with a bit of olive oil, and wrap the foil tightly. Roast in the oven for about 30-35 minutes until the garlic is soft and caramelized.

    Preparing the Olive Oil Mixture

    In a large skillet, heat the extra virgin olive oil over medium heat. Once hot, add the roasted garlic (squeezed out of their skins) and red pepper flakes. Cook for 2-3 minutes, stirring occasionally until the garlic is just golden but not burnt.

    Combining Pasta and Sauce

    Add the drained spaghetti to the skillet with the garlic and oil mixture. Toss to combine, adding reserved pasta water a little at a time until the desired consistency is reached. Season with salt and black pepper to taste.

    Finely chop the parsley and sprinkle it over the spaghetti. Toss gently to combine before serving.
