Pasta

Method

Pasta Preparation

  1. 1

    Cook the Linguine

Bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions until al dente, usually about 9-11 minutes. Once cooked, reserve 1 cup of pasta water, then drain the linguine and set aside.

Shrimp Scampi Sauce Preparation

  1. 2

    Sauté Garlic

In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat. Add the minced garlic and red pepper flakes, and sauté for about 1-2 minutes until the garlic is fragrant but not browned.

  2. 3

    Cook the Shrimp

Add the shrimp to the skillet and season with salt and pepper. Cook for about 2-3 minutes on each side, or until the shrimp are pink and cooked through.

  3. 4

    Add Wine and Lemon Juice

Pour in the white wine and lemon juice, scraping up any browned bits from the bottom of the skillet. Let it simmer for about 2-3 minutes until the sauce reduces slightly.

  4. 5

    Finish the Sauce

Remove the skillet from heat and stir in the remaining 2 tablespoons of butter until melted. Add the chopped parsley and adjust the seasoning with more salt and pepper if needed.

Combine and Serve

  1. 6

    Combine Pasta and Sauce

Add the drained linguine to the skillet with the shrimp scampi sauce. Toss to combine, adding reserved pasta water a little at a time until the desired sauce consistency is achieved.

  2. 7

    Serve

Plate the shrimp scampi over the linguine and garnish with additional chopped parsley if desired. Serve immediately.
