Cooking the Ravioli

Boil Water
Bring 4 quarts of water to a boil in a large pot over high heat.

Season Water
Add 1 tablespoon of salt to the boiling water.

Cook Ravioli
Add the ravioli to the boiling water and cook according to the package instructions, usually about 3-5 minutes if using fresh ravioli or 6-8 minutes for frozen ravioli.

Drain Ravioli
Once cooked, drain the ravioli and set aside.
Preparing the Vodka Sauce

Heat Oil
In a large skillet, heat 2 tablespoons of olive oil over medium heat.

Sauté Garlic
Add 3 minced garlic cloves and 1 teaspoon of crushed red pepper flakes. Sauté for about 1-2 minutes until the garlic is fragrant.

Add Tomatoes
Stir in 28 ounces of canned crushed tomatoes and bring to a simmer. Let it cook for about 10 minutes.

Pour in 1 cup of vodka and let it cook for an additional 5-7 minutes to cook off some alcohol.

Add Cream and Cheese
Reduce the heat to low and stir in 1 cup of heavy cream, 1 cup of grated Parmesan cheese, 1 teaspoon of salt, and 1 teaspoon of black pepper. Mix until well combined and heated through.

Once the sauce is thickened and heated through, stir in 1 cup of chopped fresh basil just before serving.
