Prepare the Ravioli Dough

Mix Ingredients
In a large bowl, combine the all-purpose flour and salt. Make a well in the center and add the eggs and olive oil. Mix with a fork until a shaggy dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.

Prepare the Filling
In a mixing bowl, combine ricotta cheese, parmesan cheese, chopped spinach, salt, and black pepper. Mix until well combined and set aside.
Roll and Fill the Ravioli

Roll the Dough
Divide the rested dough into quarters. Roll out one piece at a time on a floured surface until very thin (about 1/16 inch thick).

Cut and Fill
Using a round cutter, cut circles from the dough. Place a teaspoon of filling in the center of half of the circles. Moisten the edges with water, and top with the remaining circles. Press to seal.
Prepare the Marinara Sauce

Cook the Sauce
In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add crushed tomatoes, dried oregano, salt, and black pepper. Let simmer for 20 minutes, stirring occasionally. Stir in fresh basil at the end.
Cook the Ravioli

Boil Water
Bring a large pot of salted water to a boil.

Cook the Ravioli
Add the ravioli to the boiling water and cook for 3-4 minutes or until they float to the surface. Remove with a slotted spoon.
Serve the Dish

Combine and Serve
In a serving dish, place the cooked ravioli and top with marinara sauce. Garnish with additional parmesan and basil if desired.
