Pasta

Method

Cooking Pasta

  1. 1

    Boil Water

In a large pot, fill with water and bring to a rolling boil. Add a generous amount of salt to the water.

  2. 2

    Cook Linguini

Add 12 oz of linguini to the boiling water. Cook according to package instructions until al dente, about 8-10 minutes.

  3. 3

    Drain Pasta

Once cooked, reserve 1 cup of pasta water, then drain the linguini and set aside.

Preparing Clam Sauce

  1. 4

    Clean Clams

Rinse the fresh clams under cold water and scrub the shells to remove any dirt or sand.

  2. 5

    Sauté Garlic

In a large skillet, heat 4 tablespoons of olive oil over medium heat. Add 4 teaspoons of minced garlic and sauté until fragrant, about 1 minute.

  3. 6

    Add Clams and Wine

Add the cleaned clams to the skillet along with 1 cup of dry white wine. Cover the skillet and cook for about 5-7 minutes, until the clams open.

  4. 7

    Season the Sauce

Once the clams have opened, stir in 1 teaspoon of red pepper flakes, 1 teaspoon of salt, and 1 teaspoon of black pepper. Mix well.

  5. 8

    Add Parsley and Lemon

Stir in 1 cup of chopped parsley, the zest, and juice of 1 lemon. Cook for an additional 1-2 minutes.

Combining Pasta and Sauce

  1. 9

    Combine Linguini and Clam Sauce

Add the drained linguini to the skillet with the clam sauce. Toss to combine, adding reserved pasta water as needed to loosen the sauce.

  2. 10

    Serve

Serve the linguini hot, garnished with additional parsley and lemon wedges if desired.
