Pasta Preparation
- 1
Cook the Linguini
Fill a large pot with water, add 1 tablespoon of salt, and bring to a boil. Once boiling, add the linguini and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.
Clam Sauce Preparation
- 2
Prepare the Clams
Rinse the fresh clams under cold water to remove any sand or grit. Discard any clams that are open and do not close when tapped.
- 3
Sauté Aromatics
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 4 minced garlic cloves and 1 teaspoon of red pepper flakes. Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
- 4
Add Clams and Wine
Add the rinsed clams to the skillet and pour in 1 cup of white wine. Stir well and cover the skillet. Cook for about 5-7 minutes until the clams open, shaking the skillet occasionally.
- 5
Season the Sauce
Once the clams have opened, add 1 teaspoon of salt, 1 teaspoon of black pepper, and 1 cup of chopped fresh parsley to the skillet. Stir to combine and cook for another 2 minutes.
