Cooking the Pasta

Boil the Pasta
In a large pot, bring 4 quarts of water to a rolling boil. Add 1 tablespoon of salt to the boiling water.

Cook the Fusilli
Add the 12 oz of fusilli pasta to the boiling water. Cook according to package instructions until al dente, usually about 8-10 minutes.

Drain and Set Aside
Once cooked, drain the pasta in a colander and set aside, reserving about 1 cup of the pasta water.
Making the Vodka Sauce

Sauté Garlic
In a large skillet over medium heat, add 2 tablespoons of olive oil. Once heated, add 3 minced garlic cloves and sauté for about 1 minute until fragrant.

Add Spices
Stir in 1 teaspoon of crushed red pepper flakes and cook for an additional 30 seconds.

Incorporate Tomato Sauce and Vodka
Pour in 1 cup of tomato sauce and 1 cup of vodka. Stir well and let it simmer for about 5 minutes to allow the alcohol to cook off.

Add Heavy Cream and Seasoning
Lower the heat and stir in 1 cup of heavy cream, followed by 0.5 teaspoons of salt and 0.5 teaspoons of black pepper. Mix until smooth and heated through.

Combine Pasta and Sauce
Add the drained fusilli pasta to the sauce, tossing to coat. If the sauce is too thick, add some reserved pasta water until desired consistency is reached.

Stir in 1 cup of grated Parmesan cheese and 1 cup of chopped fresh basil. Mix until the cheese is melted and everything is well combined.
