    Clean and Prepare the Squid

    If not already cleaned, rinse the squid under cold water, then remove the head and innards. Cut the body into rings and pat dry with paper towels.

    Prepare the Breading

    In a large bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper until well combined.

Frying

    Heat the Oil

    In a deep frying pan or pot, heat the oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of the breading mixture into it; it should sizzle immediately.

    Coat the Squid

    Take the squid rings and toss them in the breading mixture until fully coated. Shake off any excess flour mixture.

    Fry the Squid

    Carefully drop the coated squid rings into the hot oil in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown and crispy.

    Drain and Serve

    Using a slotted spoon, remove the fried calamari from the oil and place them on a plate lined with paper towels to drain excess oil. Repeat with remaining squid.

    Sprinkle the fried calamari with chopped parsley and serve immediately with lemon wedges on the side for squeezing over.
