Main Ingredients

Method

Preparation

  1. 1

    Clean the Mussels

Rinse the fresh mussels under cold running water to remove any dirt or debris. Scrub the shells with a brush and remove any beards by pulling them out with your fingers.

  2. 2

    Chop Ingredients

Minced the garlic and chop the shallots and parsley. Set aside.

Cooking

  1. 3

    Sauté Aromatics

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the minced garlic and chopped shallots, and sauté for about 3-4 minutes until they are softened and fragrant.

  2. 4

    Add Tomatoes and Wine

Pour in the canned diced tomatoes (with juice) and white wine. Stir to combine, and bring the mixture to a simmer.

  3. 5

    Season the Sauce

Add salt, black pepper, and red pepper flakes to the sauce. Taste and adjust seasoning as needed.

  4. 6

    Cook the Mussels

Add the cleaned mussels to the pot, cover with a lid, and cook for about 5-7 minutes, or until the mussels open up. Discard any mussels that do not open.

  5. 7

    Garnish and Serve

Once cooked, stir in the chopped fresh parsley. Serve the mussels hot with the tomato sauce, accompanied by crusty bread for dipping.
